Hm, I think you could, but it wouldn’t rise as much or hold together as well without some other kind of binder to hold it together. And it might affect the wet/dry ratios. If you’re a regular baker, go for it. Watch the batter to see if it looks too thin or too thick and adjust accordingly. Its texture might be a bit off from what is “normal” but I’m sure it would taste good.
